Beets with Wasabi, Ginger and Lime
- 5 beets
- 1/2 tsp wasabi horseradish
- 1/2 tsp freshly grated horseradish
- 1-2 tbsp lime juice
- 1 pinch salt
- 1 pinch pepper
- Preheat the oven to 220 degrees. Wash the beets and wrap each one individually in aluminium foil and bake in the oven for 1 – 1 ½ hours, until the beets are very soft.
- Remove the baked beets from the foil, let them cool down and peel. Cut into smaller pieces and use a blender to combine with the remaining ingredients. Season to taste with salt and pepper, cool and serve with vegan pâté.
